Top Gluten-Free Cookbooks

I have to be honest. I generally don’t use cookbooks.  I tend to find traditional recipes and tweak them based on our dietary restrictions.

But people love cookbooks and this is the gift-giving season, so I did a little research on Amazon.com to see what’s out there in the Gluten Free cookbook world. If you are looking for a Hanukkah gift and know someone who is thinking about going Gluten Free, here are some suggestions.

The books I chose received 4 to 5 stars, were from different authors and different food backgrounds. Some focus on bread, some on desserts, some on main dishes. They all looked wonderful.

Here is a really easy corn bread recipe that even your gluten-eating friends won’t know is gluten free. Moist and savory, it goes great with chili, soups or even as a snack or breakfast treat. I like mine warmed with just a little honey on top.

Gluten Free Corn Bread

Ingredients:
1 cup white rice flour
¾ cup corn meal
3 T sugar
2 ½ t baking powder
¾ t salt
2 eggs
1 cup rice milk
2 T melted butter
¼ cup honey

Directions:
Preheat oven to 400 degrees. Coat a 8 X 8 glass baking dish with olive oil.
Mix dry ingredients in a small bowl.
Add wet ingredients.
Pour into baking dish and bake for 20 minutes.
