What To Do With All Those Peaches?

We are overflowing with Colorado peaches right now. Maybe you don’t have the time to can those peaches, but you still want to enjoy our amazing peaches during Sukkot or come January for Tu B’Shevat.

Here’s an easy recipe that preserves those delicious peaches without most of the work. The maple syrup only makes them more delicious!

Peach Slices with Maple Syrup

1/2 cup pure maple syrup
1/4 cup granulated sugar
2 tablespoons sherry or amaretto, optional
6 large peaches, peeled and sliced

Combine syrup and sugar in a 4 cup microwavable cup. Microwave on high for 1 1/2 minutes or until sugar is dissolved. Stir in sherry or amaretto, if using.

Add peach slices, cover and microwave until mixture begins to boil, about 5 minutes. Keep a close eye on it because it can easily boil over. Cool, stirring occasionally.

Pack into clean plastic containers to within 1/2 inch of the rim. Cover tightly. Store in refrigerator for up to 1 week or freeze for longer storage.

Absolutely divine on vanilla ice cream. Makes about 3 cups.
